I admit that this is not a recipe for an elegant dish, but it does make an easy and tasty meal.

All you need is:

  • 4 skinless, boneless chicken breasts (fresh or frozen)
  • 3/4 cup uncooked long grain rice
  • 1/4 tsp pepper
  • 1 carton of non-condensed mushroom soup (I usually use Campbell’s Gardennay Harvest Mushroom with Real Cream)

Mix all ingredients in a 2 quart baking dish. Cover and bake at 375 degrees for 45 -60 minutes or until chicken is cooked. Enjoy.
